It's been quite a while [and] new name

Hello, blogger world!

Yes, yes, I know...

It's been quite a while since I have posted...

Let alone been on here.

A lot has gone on since my absence!

The most obvious... a new name!

Say goodbye to Live Life Love 2b Healthy, and say hello to Patricia Jane [Designs] !

What's with the name change? Well, let me tell you. Growing up my mom was, and still is, an avid sewer. She sewed the majority of mine and my brother's Halloween costumes. She sewed me jumpers, dresses, and hemmed all my pants (I'm pretty short). I grew up watching her and listening to her explain what she was doing and how to do it. My grandmother, her mother, sewed, crochet and knitted. My mother learned from her. I learned from my mother. I now sew, just like my grandmother did and just like my mom still does. I named my blog website and my company/store website after my grandmother. She was an inspiration to my mother and me. Not only will she live on forever in our hearts and our memory, but also through my love of sewing and my designs.

I sew mainly infinity scarfs and headbands. I absolutely love it and it's my passion. I take pride in what I sew and stand by it.







I established my Etsy shop not too long ago and it's coming along. Slowly but surely!

Rosemary Parmesan Chicken Burgers with Caramelized Onions

Hello my precious readers!

I hope you all had a fantastic weekend and a great Monday as well.

I have a little surprise for you all....

A new recipe!

It's been a while since I've posted up a new tasty recipe for you all to enjoy and make.

The past few days I had been contemplating making chicken burgers. But not just any plain ole chicken burger.

I wanted one full of flavor.

Rosemary pairs so well with chicken and so does parmesan. So I thought, why not combine them all together as a chicken burger!

So today, I got down to business and whipped these babies up.




Rosemary Parmesan Chicken Burgers

Ingredients:
1 lb. ground chicken
2 tbs. minced rosemary
1 tbs. minced basil
1 tbs. crushed garlic
¼ cup grated parmesan cheese
salt and pepper to taste
1 tbs. olive oil
1 red onion; sliced

Directions:
In a medium sized bowl combine the ground chicken, minced rosemary and basil, garlic, parmesan cheese, salt and pepper to taste. Stir well to combine, or get down and dirty and use your hands to combine. Form into 4 equal sized patties and set aside.

In a medium sized pan over medium heat, add the olive oil and the onions. Add a pinch of salt and pepper to taste.  Sauté until the onions have caramelized, they will be a golden brown. This should take about 15 minutes. 



Once cooked, remove from pan and place into a bowl and cover to keep warm. Using the same pan, cook the chicken patties. It should take 3-5 minutes to cook on each side. Once the juices run clear, the burgers are cooked all the way through. 10 minutes in total.




Serve the rosemary parmesan chicken burgers on a plate and top with the caramelized onions.

They were delicious!! The parentals loved them! I paired it with mushroom couscous and zucchini. 

There were absolutely no left-overs whatsoever. Which, I must admit, made me a little sad.
